Seeking for advice to break into Economic Consulting

Hi! I am a rising junior at a west coast university (USC) and I am really interested in doing economic consulting after graduation or landing an econ consulting internship in my junior summer.
Here's my profile: I have a 3.65 GPA double major in applied math and a pre-law/social science major. I have made into the finalist of a regional case competition held by a major econ-consulting firm, and I am going to spend my summer abroad (China) interning in a tier 2 management consulting firm.
Also I have decided to study abroad in London (LSE) in my junior year. Although LSE may have a better name in econ researches, I'm afraid that I might lose some networking opportunity.
Also, I am an international student.
So is there any advice on how to prepare for the interview/network?
What econ courses shall I take? I've already taken micro macro intro and I plan to study econometrics in my junior year.
