Check out finsight - it aggregates structured products deals, you can look see the diff products available and what’s been in the market recently. S&P and DBRS presales for bond deals are free if you make a login and Moody’s ones are free for 30 days (I think, at some point you need to be a paid subscriber). Kroll (if not all paywalled) can be the best laid out one to walk you through a specific deal.
I would doubt you be asked to model a deal in an interview, it would be pretty challenging to model a multi-tranche deal in excel especially in the condensed time you would have for an interview, but the presales will walk you through how these structures work and should help with the interview.
