Cannot Determine if I'm Screwed or Not

Hello friends,

A few years back at a retail store I was caught going against corporate policy and was fired from my job. Obviously this wasn't a rule i was aware of, but I was wondering if as long as I leave it off of my resume, there's no way HR knows to contact them right? Also, do applications ask for your entire employment history? If that's the case I was going to provide my manager's phone number because they're close with me and knew it was an honest mistake. Any advice is appreciated
